Gliadin fraction of gluten protein undertakes important functions in the production of bakery products, but causes serious digestive problems in celiac patients. In this study, the possibility of usage of rice flour, corn flour and chestnut flour in par-baked and full-baked gluten-free cakes production was investigated.The basic components (shortening, sugar, baking powder, non-fat milk powder, egg white powder) were kept constant in the study. Response Surface Methodology (RSM) was used to determined acceptable formula for control cake made from wheat flour and different three gluten-free cakes, and the most appropriate emulsifier ratio in formulas was 6%. In optimized cake formulas, 99-107% water, 0.075-0.225% xanthan gum and 0.075-0.150% guar gum were used and the best cake attributes were obtained with the 1:1 ratio of corn flour-potato starch mixture and the 7:3 ratio of chestnut flour-potato starch mixture.Transglutaminase enzyme were added at 0-0.25% into optimized cake formulas and partial cooking time for each cake formula was determined using temperature changes during baking cycle and Rapid Visco Analyzer data. Then full and par-baked cakes made with the obtained formula were stored in -18 °C for a period of 6 months and cake quality was evaluated throughout the storage. Crust and crump attributes and specific volume decreased while hardness of all cakes increased with storage time.Compared par-baked and full-baked cakes, par-baked cakes have higher scores for crump attributes (74.42/80), but crust attributes scores, specific volume, hardness and chewiness values of those cakes were approximately 4, 1.5, 9 and 10.5% lower than full-baked cakes, respectively. For each cake, considering the sensory evaluation of all cake attributes no significant differences fresh baked, par-baked and full-baked cakes.Key words: Celiac, gluten-free cake, par-baking, baked products.
Unlu mamullerin üretiminde önemli fonksiyonlar üstlenen glüten proteininin gliadin fraksiyonu, çölyak hastalarında ciddi sindirim problemlerine yol açmaktadır. Bu çalışmada çölyak hastalarının tüketebileceği kısmi ve tam pişirilmiş glütensiz kek üretiminde pirinç unu, mısır unu ve kestane ununun kullanım olanakları araştırılmıştır.Çalışmada temel bileşenlerin (yağ, yumurta akı tozu, süt tozu, kabartma tozu, vanilya) miktarı sabit tutulmuştur. Buğday unundan üretilen kontrol keki ve üç farklı un kombinasyonu ile üretilen glütensiz kekler için en uygun formülü belirlemede Yanıt Yüzey Yöntemi (YYY) kullanılmış ve formüllerde en uygun emülgatör oranı % 6 olarak belirlenmiştir. Optimize edilen kek formüllerinde kullanılan su oranı % 99?107, ksantan gam oranı % 0.075?0.225 ve guar gam oranı ise % 0.075?0.150 arasında değişmiş olup, 1:1 oranında mısır unu-patates nişastası karışımı ve 7:3 oranında kestane unu-patates nişastası karışımı en iyi kek özelliklerini sağlamıştır.Optimize edilen kek formüllerine % 0?0.25 oranında transglutaminaz enzimi eklenmiş, her bir formül için kullanılacak kısmi pişirme sürelerinin belirlenmesinde kek içi sıcaklık değişimi ve Hızlı Viskozite Testi verilerinden yararlanılmıştır. Daha sonra tam ve kısmi pişirilmiş kekler ?18°C'de 6 ay depolanmış ve depolamanın kek kalitesine etkisi değerlendirilmiştir. Depolama süresince tüm keklerin dış ve iç özellik puanlarında ve özgül hacimlerinde azalma, sertlik değerlerinde ise artma meydana gelmektedir.Kısmi ve tam pişirilmiş kekler karşılaştırıldığında, kısmi pişirme yöntemi ile üretilen keklerin iç özellik puanları daha yüksek (74.42/80), dış özellik puanları, özgül hacimleri, sertlik ve çiğnenebilirlik değerleri ise sırasıyla yaklaşık % 4, 1.5, 9 ve 10.5 daha düşük bulunmuştur. Her bir kek için, tüm kek özellikleri göz önünde bulundurularak yapılan duyusal değerlendirmede, hazırlanan taze kekler ile tam veya kısmi pişirilerek depolanmış kekler arasında istatistiksel olarak fark görülmemiştir.Anahtar kelimeler: Çölyak, glütensiz kek, kısmi pişirme, unlu mamuller.
