In the scope of the study, usability of sourdough in cake was tried to determine. Type I and Type II sourdough were used in 10%, 15%, 20% ratios and the physicochemical, textural and sensory properties of the produced cakes were determined. Type I and Type II sourdough's pH values were respectively found as 4,25 and 3,82, lactic acid content were found as 0,93% and 1,48%. The yeast counts of Type I and Type II sourdough were respectively determined as 5,25 and 7,36 log cfu / g and lactic acid bacteria counts were determined as 9,10 and 8,92 log cfu / g. The pH values of the cakes ranged from 6,08-7,03, titration acidity in terms of lactic acid 0,24-0,50%, moisture values 17,16-18,50%, water activities 0,778-0,790, protein content in dry matter 6,33-7,95% and the total sugar content in dry matter 34,4 to 37,8%. While the protein contents of the sourdough cakes were less than the control cake, the microbial load increased as the sourdough ratio increased, and the total sugar content of the cakes tended to decrease. The interior color L *, a *, b * values of the cakes ranged from 72,13 and 73,79, −4,22 and −2,99, 23,10 and 26,95 and exterior color L *, a *, b * values ranged from 48,31 to 50,78, 11,69 and 13,09, 23,73 and 27,77, respectively. In terms of textural properties, hardness values ranged from 342,13-475,20 g, adhesiveness 0,02-0,03 mJ, resilience 0,22-0,28, cohesiveness 0,50-0,65, springiness 4,74-5,33 mm and chewiness 8,07-16,32 mJ. Compared with control cake, Type I or Type II sourdough caused to be less in term of hardness, resilience, cohesiveness, chewiness values. While the sourdough additive does not affect the adhesiveness (p> 0.05), the springiness value of 15%, 20% Type I and 20% Type II sourdough cakes is different from the control cake (p <0.05). In terms of sensory proporties, sourdoughs did not significantly affect the chewiness and flavor of the cakes (p> 0.05), but 10%, 15% Type II sourdough cakes differed from the control in term of interior and exterior color, and 10% Type II sourdough cakes differed in pore structure was found (p <0.05). Increasing the usage of sourdough in cakes and improving the properties of cakes is possible with future studies.Keywords: Cake, sourdough, physicochemical, textural, sensory properties.

Çalışma kapsamında ekşi hamurun kekte kullanılabilirliği belirlenmeye çalışılmıştır. Tip I ve Tip II ekşi hamurdan %10, %15, %20 oranlarında kullanılmış, üretilen keklerin fizikokimyasal, tekstürel ve duyusal özellikleri belirlenmiştir. Tip I ve Tip II ekşi hamurun pH değeri sırasıyla 4,25 ve 3,82, laktik asit miktarı %0,93 ve %1,48 bulunmuştur. Tip I ve Tip II ekşi hamurun maya sayısı sırasıyla 5,25 ve 7,36 log kob/g, laktik asit bakteri sayıları sırasıyla 9,10 ve 8,92 log kob/g olarak tespit edilmiştir. Keklerin pH değeri 6,08-7,03, laktik asit cinsinden titrasyon asitlikleri %0,24-0,50 arasında, nem değerleri %17,16-18,50, su aktiviteleri 0,778-0,790 arasında, kuru maddede protein içerikleri %6,33-7,95, toplam şeker içeriği %34,4-37,8 arasında değişmiştir. Ekşi hamurlu keklerin protein içerikleri kontrol kekinden daha azken, ekşi hamur oranı arttıkça mikrobiyal yük artmış, keklerin toplam şeker miktarı düşme eğilimi göstermiştir. Keklerin iç renk L*, a*, b* değerleri sırasıyla 72,13 ile 73,79, −4,22 ile −2,99, 23,10 ile 26,95 ve kabuk renk L*, a*, b* değerleri 48,31 ile 50,78, 11,69 ile 13,09, 23,73 ile 27,77 arasında değişmiştir. Keklerin tekstürel özelliklerinden sertlik 342,13-475,20 g, yüzey yapışkanlığı 0,02-0,03 mJ, esneklik 0,22-0,28, iç yapışkanlık 0,50-0,65, elastikiyet 4,74-5,33 mm ve çiğnenebilirlik 8,07-16,32 mJ arasında değişmiştir. Kontrol keki ile kıyaslandığında Tip I veya Tip II ekşi hamur sertlik, esneklik, iç yapışkanlık, çiğnenebilirlik değerlerinin daha düşük olmasına sebep olmuştur. Ekşi hamur katkısı yüzey yapışkanlığını etkilemezken (p>0,05), elastikiyet değeri %15, %20 Tip I ve %20 Tip II ekşi hamurlu kekler kontrol kekinden farklıdır (p<0,05). Keklerin duyusal özelliklerinden çiğnenebilirlik ve lezzetlerine ekşi hamurların önemli ölçüde etkilemediği (p>0,05), ancak %10, %15 Tip II ekşi hamurlu keklerde kontrol kekinden dış ve iç renkte, %10 Tip II ekşi hamurlu keklerde gözenek yapısında farklılık oluşturduğu saptanmıştır (p<0,05). Yapılacak çalışmalar ile ekşi hamurun keklerde kullanımının arttırılması ve kek özelliklerinin geliştirilmesi muhtemeldir.Anahtar Kelimeler: Kek, ekşi hamur, fizikokimyasal, tekstürel, duyusal özellikler.
