Aim. The aim of this research is to discover the effects of different salting and preservation techniques on the quality of kashar cheese.Material and Method. Physical, chemical, and microbiological and sensory analysis have been done on the 1st, 7th, 15th, 30th, 60th, 90th, and 120th and 30th, 60th, 90th, and 120th days of the maturation respectively on 270 kashar cheese examples produced for this research.Results. It has been determined that the values of dry matter and fat, salt, and ash in dry matter, nitrogen solvable in water, maturation degree, lipolysis, and titratable acidity increased while the values of total nitrogen and aw decreased during the maturation period of cheeses. Dry matter, ash in dry matter, total nitrogen, lipoysis values in waxed cheese are higher and salt in dry matter and titration acid values are lower in waxed cheeses examples than those of the vacuum-packed cheese examples. The total number of aerobic mesophilic bacteria, Lactococcus, Staphylococcus-Micrococcus and psychrotrophic bacteria are lower and the number of yeast-mold and lactobacilli are higher in cheese examples salted in boiler than those of the cheese examples salted in brine. Coliform bacteria and reproduction of Staphylocaccus aureus were not determined in the examples of kashar cheese.Conclusion. Salting in brine can also be used besides salting in boiler, the cheese salted in broil can be preserved for 90 days by waxing it in respect to sensory features, and vacuum packed cheese can be preserved for 60 days while the cheese salted in brine can be preserved for 60 and 120 days. It has been determined that vacuum-packed and wax-covered cheese has no negative effect on the quality of the cheese or does not delay maturation. It has been concluded that cheese wax can be used as an alternative packaging material along with vacuum packaging.

Amaç. Bu araştırma, kaşar peynirinin kalitesine farklı tuzlama ve muhafaza yöntemlerinin etkisini ortaya koymak amacıyla yapıldı.Materyal ve Metot. Deneysel olarak üretilen 270 adet kaşar peyniri örneklerine olgunlaşmanın, 1, 7, 15, 30, 60, 90 ve 120. günlerinde fiziksel, kimyasal ve mikrobiyolojik analizler; 30, 60, 90 ve 120. günlerinde ise duyusal analizler yapıldı.Bulgular. Olgunlaşma süresince peynir örneklerinin kurumadde, kurumaddede yağ, kurumaddede tuz, kurumaddede kül, suda çözünen azot, olgunlaşma derecesi, lipoliz, titrasyon asitliği değerlerinin arttığı, pH, protein, kurumaddede protein, toplam azot ve aw değerlerinin azaldığı belirlendi. Mumla kaplanan peynir örneklerinde, kurumadde, kurumaddede kül, toplam azot ve lipoliz değeri, vakum ambalajlanan peynir örneklerinden yüksek, kurumaddede tuz ve titrasyon asitliği değerleri düşük bulundu. Kazanda tuzlanan peynir numunelerinde toplam aerobik mezofilik bakteri, Lactococcus, Staphylococcus-Micrococcus ve psikrofil bakteri sayısı, salamurada tuzlanan peynir numunelerinden düşük, maya-küf ve laktobasil sayısı yüksek bulundu. Kaşar peyniri numunelerinde koliform bakteri ve Staphylocaccus aureus üremesi görülmedi.Sonuç. Kazanda tuzlamanın dışında salamurada tuzlama yönteminin de kaşar peyniri üretiminde kullanılabileceği, duyusal özellikleri yönünden, kazanda tuzlanan peynirlerin mumla kaplanarak 90 gün muhafaza edilebileceği, vakum ambalajlanan peynirlerde 60 günlük sürenin, salamurada tuzlama yönteminde ise 60 ve 120 günlük muhafaza süresinin kullanılabileceği belirlendi. Vakum ambalajlamanın ve peynir mumu ile kaplamanın peynirin kalitesi üzerine olumsuz bir etkisinin bulunmadığı, peynirin olgunlaştırmasını geciktirmediği saptandı. Kaşar peynirlerinin muhafazasında vakum ambalajlamanın yanı sıra peynir mumu ile kaplamanın alternatif bir ambalaj materyali olarak kullanılmasının tavsiye edilebileceği kanaatine varılmıştır.
