In this research, the most consumed edible plants species in Düziçi district of Osmaniye province, the use of these plants and the purpose for which people consume plant s are intended to be recorded. In this study, it is aimed to make food analysis of the food by preparing the tirşik soup made from Tirşik (Arum maculatum L.) plant which is consumed in the research field with traditional cooking method. Qualitative research model and experimental method were used in the study. To acquire healthier data, interviews have been done with the people who are above 55 years of age and consume edible plants. During the interviews, audio and video recording have been taken As a result of the data analysis, traditional recipes for edible plants were obtained. According to the findings, edible plant consumed by the belief that beneficial to health based on the information obtained is determined that the peltandra. In the second stage of the study, in order to determine the nutritional values of the soup made from peltandra, the fresh form of the peltandra and the raw products of the other products to be added to the meal were prepared and analyzed. Energy protein, carbohydrate, fat, ash, fiber, moisture, iron (fe) and vitamin C (Ascorbic acid) analyzes were performed for all raw ingredients, fermented and cooked peltandra soup. As a result of the analysis; It is determined that the peltandra is rich in vitamin C, carbohydrate, protein and iron, but some nutritional values decrease due to heat and waiting condition.

Bu araştırma Osmaniye ilinin Düziçi ilçesinde en çok tüketilen yenilebilir ot türlerinin neler olduğu, bu otların kullanım şekilleri ve insanların hangi amaçla bu otları tükettiklerinin belirlenerek kayıt altına alınması amaçlanmıştır. Ayrıca bu çalışma ile araştırma alanında tüketimi fazla olan Tirşik (Arum maculatum L.) otundan yapılan tirşik çorbasının geleneksel pişirme yöntemi ile hazırlanarak yemeğin besin analizlerinin yapılması amaçlanmıştır. Araştırmada nitel araştırma modeli ve deneysel yöntem kullanılmıştır. İlk aşamada veri toplama aracı olarak görüşme formu kullanılmıştır. Daha sağlıklı veriler elde edileceği düşüncesi ile 55 yaş üstü, yenilebilir ot tüketen kişilerle yüz yüze görüşmeler yapılmıştır. Görüşmeler sırasında ses ve görüntü kayıtları alınmıştır. Verilerin çözümlenmesi sonucunda yenilebilir otlarla ilgili geleneksel reçeteler elde edilmiştir. Elde edilen bulgulara göre sağlığa yararlı olduğu inancıyla en çok tüketilen yenilebilir otun, tirşik otu olduğu belirlenmiştir. Çalışmanın ikinci aşamasında tirşik otundan yapılan çorbanın besin değerleri belirlenmiştir. Yemeğe katılan tüm çiğ malzemeler, mayalanmış ve pişirilmiş tirşik çorbası numunelerine, protein, karbonhidrat, yağ, kül, lif, nem, demir (Fe) ve C (Askorbik asit) vitamini analizleri yapılmıştır. Yapılan analizler sonucunda; tirşik otunun C vitamini, karbonhidrat, protein ve demir yönünden zengin olduğu ancak sıcaklığın etkisiyle bazı besin değerlerinde azalma olduğu tespit edilmiştir.
