The aim of this study is to determine the effect of different storage temperature (4 oC to 30 oC) and time (0, 7, 14, 30, 60, and 90 days) conditions on the general composition, microbiological quality and aroma profile of shalgam juice by chemometric methods.At the beginning of the storage, the pH of the samples was 3.89, the total acidity in lactic acid was 6.06 - 6.66 g/L and the brix values ranged from 2.67 to 2.73, at the end of storage these values were 3.89 - 3.98 for pH, 5.94 - 6.49 g/L for total acidity and 3.07 - 3.27 for brix values. The color parameters (L *, a *, b *, C * and h) of shalgam juice samples decreased due to storage time. Coliform bacteria count was not significantly different for pasteruized shalgams but this count decreased in unpasteruized samples. The total number of mesophilic aerobic bacteria decreased in unpasteurized samples, but no significant decrease was observed in the pasteurized samples. Although the number of lactic acid bacteria was low in pasteurized samples due to the effect of pasteurization, these values increased due to storage. When the amount of yeast and mold was analyzed, it was seen that the samples had different results according to the storage temperature, and it was determined that yeast and mold counts increased in shalgams stored before and after the pasteurization at 4 °C. As a result of sensory analysis, shalgam juices mostly preferred by panelists were samples of day 0 and 7 day stored shalgam juices. As the result of the aroma analysis, a total of 34 volatile aroma compounds were determined and the total amount of volatile compounds, which was 1558.63 – 2179.49 µg/L at the beginning of storage, decreased to 556.70 – 800.12 µg/L at the end of storage. According to principal component analysis (PCA), shalgam samples were classified succesfully for their storage times in terms of aroma profiles.Keywords: Shalgam juice, storage time, microbiology, aroma, chemometrics.

Bu çalışmanın amacını farklı depolama sıcaklık (4 oC ile 30 oC) ve süre (0, 7, 14, 30, 60, ve 90 gün) koşullarının şalgam sularının genel bileşimi, mikrobiyolojik kalitesi ve aroma profili üzerindeki etkisinin kemometrik yöntemlerle belirlenmesi oluşturmaktadır.Depolama başlangıcında örneklerin pH'ı 3,89, laktik asit cinsinden toplam asitlikleri 6,06 – 6,66 g/L ve briksleri 2,67 – 2,73 arasında değişmiş olup, depolama sonunda bu değerler pH için 3,89 – 3,98, toplam asitlik için 5,94 – 6,49 g/L ve briks için 3,07 – 3,27 aralığında belirlenmiştir. Şalgam suyu örneklerinde incelenen renk parametrelerinin (L*, a*, b*, C* ve h), depolamaya bağlı olarak tamamında azalma gözlemlenmiştir. Koliform bakteri sayısında pastörizasyon sonrası depolamaya bırakılan örneklerde önemli bir değişiklik görülmezken, pastörizasyon öncesi örneklerdeki değerlerde azalma meydana gelmiştir. Toplam mezofilik aerobik bakteri sayısı pastörizasyon öncesi örneklerde azalma gösterirken, pastörizasyon sonrası örneklerde depolama sonunda belirgin azalma göstermemiştir. Laktik asit bakterisi sayısı pastörizasyon sonrası örneklerde, pastörizasyon işleminin etkisiyle düşük olsada, bu değerler depolamaya bağlı olarak artış göstermiştir. Maya ve küf sayısına göre örnekler incelendiğinde ise depolama sıcaklığına göre farklılıklar görülmüş ve özellikle 4 oC'de depolanan pastörizasyon öncesi ve sonrası örneklerin depolama süresine bağlı olarak artış gösterdiği tespit edilmiştir. Duyusal analiz sonucunda panelistler tarafından en çok beğenilen şalgam suları 0. ve 7. gün örnekleri olmuştur. Örneklerin aroma bileşikleri analizi sonucunda toplamda 34 uçucu aroma bileşiği tespit edilmiş olup, depolama başlangıcında 1558,63 – 2179,49 µg / L olan toplam uçucu madde miktarı, depolama sonunda 556,70 – 800,12 µg / L aralığına azalmıştır. Temel bileşen analizi (PCA) kemometrik yöntemine göre örnekler aroma profili yönünden birbirinden depolama süresine göre iyi bir şekilde ayrılmıştır.Anahtar Kelimeler: Şalgam suyu, depolama süresi, mikrobiyoloji, aroma, kemometri.
