In this study, some properties of Ayvalık, Domat and Gemlik olive cultivars and olive oils with respect to physicochemical aspects, fatty acid compositions, tocopherol compositions, and phenolics, based on cultivar type and ripening duration were investigated. Changes in some physicochemical properties were monitored and evaluated during the ripening. The cultivar with the heaviest fruit and the highest rate, was Domat. Water content of fruits was not regular during ripening. Oil rate was highest in Gemlik and lowest in Domat. The oil rate of fruits increased during ripening and became highest in December. Fatty acid contents of olive oils were determined using Gas Chromatography (GC). Oleic acid (59.10 % ? 75.33 %), palmitic acid (14.26 % - 16.60 %), linoleic acid (4.24 % ? 17.1 %), stearic acid (2.29 % - 4.16 %), palmitoleic acid (0.63 % - 2.04 %) and ?-linolenic acid (0.51 % - 1.08 %) were detected as the major fatty acids. Oleic acid was established as the most abundant at all varietiest and harvest (sampling) times. The greatest change during ripening was determined as the increase at linoleic acid rate, and the decrease at oleic acid rate. HPLC was applied to determine the tocopherol contents. ?-Tocopherol and minute amounts of ß- and ?-tocopherols were detected in the samples. ?-Tocopherol amounts were maximum at Ayvalık (180.43 ppm), Domat (125.56 ppm) and Gemlik (168.19 ppm) cultivars in September, November, and December, respectively. The phenolics in olive oil and the fruit were detected using HPLC. During the ripening period, a total of 20 types of phenolics in fruits, and 11 types of phenolics in olive oil of cultivars were determined. Hydroxytyrozol was the most concentrated phenolics (517.78 ppm) among all cultivars, and it was detected in Ayvalık. Statistically significant (p?0.01) differences were found among physicochemical properties, phenolics amounts, tocopherol amounts, and fatty acid compositions according to cultivars and all harvest times.

Bu çalışmada Balıkesir ili Edremit Körfezi'nde yetiştirilen Ayvalık, Domat ve Gemlik zeytin meyve ve yağlarının bazı fizikokimyasal özellikleri, yağ asidi bileşimleri, tokoferol ve fenolik bileşik miktarlarının olgunlaşmaya ve çeşide bağlı olarak değişimleri araştırılmıştır. Çeşitlerin bazı fizikokimyasal özellikleri olgunlaşma boyunca izlenmiş ve değerlendirilmiştir. Meyve ağırlığı ve et oranı en yüksek çeşit Domattır. Meyvelerin nem oranları olgunlaşma boyunca düzenlilik göstermemiştir. Meyve örneklerinde yağ oranı en yüksek çeşit Gemlik iken, en düşük çeşit ise Domattır. Meyvelerde yağ oranı olgunlaşma ile birlikte artmış ve en yüksek değerlerine Aralık ayında ulaşmıştır. Zeytinyağlarının yağ asidi bileşimleri Gaz Kromatografisi (GC) tekniğiyle belirlenmiştir. Başlıca yağ asitleri olarak, oleik (% 59.10-75.33), palmitik (% 14.26-18.60), linoleik (% 4.24-17.01), stearik (% 2.29-4.16), palmitoleik (% 0.63-2.04) ve ?-linolenik asit (% 0.51-1.08) saptanmıştır. Oleik asit tüm çeşit ve hasatlarda en yüksek miktarlarda saptanmıştır. Olgunlaşmadaki en büyük değişim oleik asit oranının azalması ve linoleik asit oranının artışıdır. Tokoferol içeriklerinin belirlenmesinde YPSK tekniği uygulanmıştır. Örneklerde azalan sırayla ?-tokoferol ve düşük miktarlarda ß- ve ?-tokoferoller tespit edilmiştir. ?-Tokoferol miktarı Ayvalık (180.43 ppm), Domat (125.56 ppm) ve Gemlik (168.19 ppm) çeşidinde sırasıyla Eylül, Kasım ve Aralık aylarında en yüksek oranda saptanmıştır. Zeytin meyvesi ve zeytinyağındaki fenolik madde bileşenleri YPSK tekniğiyle belirlenmiştir. Çeşitlerin olgunlaşma sürecinde meyve örneklerinde toplam 20 adet ve zeytinyağlarında toplam 11 adet fenolik bileşik tespit edilmiştir. Meyvelerde 517.78 ppm ile en yüksek konsantrasyondaki fenolik bileşik Ayvalık çeşidinde saptanan hidroksitirozoldür. Zeytin çeşitleri ve farklı hasat zamanları bakımından fizikokimyasal özellikler, fenolik bileşik ve tokoferol miktarları ile yağ asidi bileşimleri arasında istatistiksel olarak p?0.01 seviyesinde farklılık bulunmuştur.
