In this study, it was investigated that effects of edible coating materials and UV-C irradiation under modified atmosphere conditions on postharvest physiology of White button mushroom (Agaricus bisporus) which is consumed gladly in the world and Turkey. The mushrooms which are harvested same maturity were coated with edible coating materials (Agar or egg white protein) and they were stored under the conditions of 90-95 % relative humidity at +4 °C during 20 days. Weight loss, color (L*, a*, b* C* and Hue), in - package gas components (O2, CO2 and N2), protein, total phenolic content, total antioxidant activity, catalase, polyphenoloxidate (PPO) respiration rate and external ethylene content were determined at harvest and 5 days intervals following harvest. When examined all parameters were taken into consideration in the study, it was found that edible coating material which gives the best result is agar in white button mushroom (Agaricus bisporus) which was storaged +4 °C and 90-95 % relative humidity conditions during 20 days.

Bu çalışmada, Dünya'da ve Türkiye'de severek tüketilen beyaz şapkalı kültür mantarının (Agaricus bisporus), modifiye atmosfer koşullarında yenilebilir kaplama malzemelerinin beyaz şapkalı mantarlarda hasat sonu fizyolojisi üzerine etkileri araştırılmıştır. Aynı olgunlukta hasat edilen mantarlara, yenilebilir kaplama malzemeleri (Yumurta akı proteini veya Agar) kaplanarak +4 °C'de % 90-95 oransal nem koşullarında 20 gün depolanmıştır. Hasat döneminde ve hasattan sonra 5 gün aralıklarla, ağırlık kaybı, renk (L*, a*, b* C* ve Hue), ambalaj içi gaz bileşimi (O2, CO2 ve N2), protein, toplam fenolik içeriği, toplam antioksidan aktivitesi, katalaz, polifenoloksidaz (PPO), solunum hızı ve dışsal etilen miktarı belirlenmiştir. Araştırmada incelenen bütün parametreler dikkate alındığından kültür mantarının (Agaricus bisporus) +4°C'de ve % 90-95 oransal nem koşullarında 20 günlük depolanması sonucunda en iyi sonucu veren yenilebilir kaplama malzemesinin agar olduğu tespit edilmiştir.
