تم تحضير متحلل بروتيني من المركز البروتيني لنخالة الحنطة المحلية صنف اباء 99 باستعمال إنزيم التربسين، من مصدر ميكروبي عند ظروف مثلى كما يلي تركيز الإنزيم /المادة الأساس 2% وزن /حجم ، درجة حرارة 37 م ، ورقم هيدروجيني 8 ، ووقت 240 دقيقة . تم فصل المتحلل الإنزيمي باستعمال تقنية الترشيح الهلامي، وتم الحصول على ثلاثة متحللات بروتينية قدرت تراكيزها 0.456، 0.234، 0.789 ملغم /مل على التوالي. جرى اختبار فعاليتها المناعية تجاه الخلايا اللمفية، وفعالية البلعمة لخلايا البلعمة الكبيرة لخلايا طحال الفئران من نوع Albino mice . أظهرت النتائج أن المتحللات البروتينية المحضرة من بروتين نخالة الحنطة أظهرت فعالية مناعية عالية مما يمكن من إدخالها في تصنيع المنتجات المناعية.

Protein hydrolysates were prepared from local wheat bran class Ibaa 99 that were enzymatically prepared by microbial protease Trypsin . Protein hydrolysates were separated by gel filtration technique, and three concentrations were obtained 0.234, 0.456,0.789 mg/ml. Immuonodulating activity was evaluated by measuring their effects on in vitro proliferation of albino mice spleen lymphocytes and phagocytic activity of potential macrophages. The results showed that wheat bran protein hydrolysates have the highest immuonodulating activity at optimum conditions E/S 2% w/v , temperature 37 C, pH 8 and time 240 min. The results suggested that lower molecular weight and positively charged peptides released from wheat bran protein were effective in stimulating immunomodulating activity. Thus, it can be concluded that it can be used in the preparation of potent immunodulating products.
