هدف البحث بشكل عام إلى دراسة واقع إنتاج دبس التفاح كأحد المنتجات الثانوية لثمار التفاح في محافظة السويداء السورية لموسم 2013، وتقدير نسبة الفاقد في بساتين التفاح والعوامل المؤثرة فيها، واستخدم منهجا: التحليل الوصفي والكمي للوصول إلى الأهداف من خلال عينة عشوائية بسيطة مكونة من 50 مزارعاً قاموا بصناعة دبس التفاح، وبالمقابل تم مقابلة 50 مزارعاً لم يخوضوا تجربة هذه الصناعة، وذلك باستخدام استمارة مسح حقلي، وأظهرت النتائج أن الفاقد قدر بنحو %16 من الإنتاج الكلي، وقد حققت صناعة دبس التفاح ربحاً صافياً بلغ نحو 223.54 ل.س/ كغ، و %82 أربحية لكل ليرة مستثمرة، وبالتالي قد تشكل هذه الصناعة بديلا أفضل لفاقد بساتين التفاح، ولكن ما زالت هذه الصناعة تواجه مجموعة من الصعوبات التسويقية والتصنيعية واللوجستية المختلفة.

This research aims to study the reality of black treacle of apple as a secondary production, and estimating the proportion of production losses in the apple orchards and the factors which affect it in Syrian Suwayda Government during the season 2013.The methodology which was used in this study included descriptive and quantitative analysis to reach goalsA sample of 50 farmers who product the black treacle of apple, and other 50 farmers who do not, have been interviewed to collect the requested data.The results showed that the proportion of the production losses was amounted about 16% of total production, and the black treacle of apple production gave a net profit which was amounted 223.54 SP/ kg, and about 82% of profitability for one SP, thus it may constitute a better alternative product in comparison with other ways of apple losses marketingHowever, the producers still face many marketing, manufacturing and logistics difficulties.
